What is Ai Yu 愛玉 Jelly?
Commonly found as a drink addition at boba shops, Ai yu jelly is made from the seeds of Ai Yu figs primarily in Taiwan. which have a very high natural pectin content. The pectin is extracted from the seeds and interacts with minerals in water to create a jelly that pairs well with honey and lime or lemon juices. In Taiwan, it is common to find it served during long hot summers as a refreshing treat that is natural and gentle on the digestive system.
How to Participate
Step 1: Purchase Ai yu seeds
ITASA has teamed up for a collaboration with Yun Hai for a special discounted pack of Ai Yu seeds + reusable cloth bag. You won’t want to miss out since quantities are limited! After making and tasting naturally made ai yu jelly, we guarantee you won’t want to go back to the pre-made or canned kind!
For individuals, it is recommended to buy 1-2 packs and for student organization or other groups, 5 or more packs is recommended.

Step 2: Join the Live Ai Yu Jelly Workshop!
Join the Facebook Live event on March 24, 2022 at 6pm ET / 5pm CT / 4pm PT to follow along with the lives-treamed workshop with Lillian & Lisa from Yun Hai.

Ai Yu Recipes for Every Occasion
Just the Jelly - dress with some honey water and lemon, add to a light/fruit-forward beverage or use your imagination to add this jelly to a variety of dessert uses.
